I found this amazing crockpot chicken taco recipe from Sweet Pea’s Kitchen that I wanted to share.
Jonathan and I received an amazing crock pot as a wedding gift, so I have been looking for more crock pot recipes lately. I am home all day running the preschool so it works out perfectly to have meals cooking while Im with the munchkins and then ready by the time I close up. I made this meal gluten free/organic and it is delicious! I cut the original recipe in half, it was the perfect amount for my husband and I plus leftovers. We now have Taco Tuesdays 🙂
3 boneless, skinless chicken breasts
1/2 Tbsp chili powder
1/8 tsp garlic powder
1/8 tsp crushed red pepper flakes
1/8 tsp dried oregano
1/4 tsp paprika
3/4 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper
1/2 jar of salsa
1 cup chicken broth
Add all ingredients into the crock pot and cook on High for 5 hours. Shred meat with a fork and walla! I use Udi’s gluten free tortillas and warm them up in our toaster oven. I also add shredded cheese, sour cream and avocado to our tacos. SO YUMMY.
